Healthy Sticky Date Pudding
Instructions
  1. First, preheat your oven to 160 degrees. Preheating the oven before baking your food is important. Otherwise, your food will be cooked at a lower temperature. In addition, preheating your oven will prevent cold spots and ensure that your food will cook evenly. Normally, your oven will heat during the first 5 to 15 minutes, depending on the set temperature.
  2. Next, placed chopped dates in 3 to 4 tablespoons filtered water for around 5 to 10 minutes or until the dates are soft. We would want to ensure that the Medjool dates will achieve its chewiness, softness, and sweetness once the food is done. Drain and set aside the water used in soaking the dates.
  3. Using a fork or whisk, mix almond meal, beaten eggs, cinnamon and baking powder, sea salt, and maple syrup (optional) in a bowl until there are no clumps present and instead you see a light and bubbly mixture. Do the mixing for about five minutes or until the desired consistency is achieved.
  4. Next, get the reserved water used to soak the chopped dates, and then pour it into the almond meal mixture. Whisk again until the mixture is smooth enough. Then, add the chopped dates and stir into the mixture.
  5. Grease two small-size oven-proof bowls using coconut oil, then scoop mixture equally into each small bowl. Place the bowls with the mixture in the oven and bake for 15 minutes. After baking, set aside to cool down.
  6. Meanwhile, add all the “date drizzle” ingredients in a bowl, a food processor, or a stick blender, and mix all the ingredients until smooth. If the mixture seems too thick, add extra lukewarm water.
  7. Get your baked date pudding and add date drizzle and sprinkle with chopped pecans. As an option, you can add a scoop of coconut ice cream, strawberry, raspberries, or any berries of your choice. Ta-dah! Your homemade healthy date pudding that is ready to be eaten and enjoyed!
